Cut off the top and core center of apples. Mix 1/2 cup oatmeal, 1/4 cup brown sugar and 1 teaspoon cinnamon (or pumpkin pie spice). Dice 2 Tablespoons butter and add to mixture. Cut this mixture with a fork to incorporate the butter. Stuff oatmeal mixture into the center of apples. Place in crock pot, cover and cook on low for 4-6 hours.
