AIMEE FORTNEY'S WILTED COCONUT KALE AND ROASTED SWEET POTATOES
Joining me is a friend and Veteran, Keni Thomas. Keni and his wife love to get in the kitchen and eat healthy foods. What better way to honor Keni and his healthy eating, than to whip up a healthy, wilted coconut kale and roasted sweet potato dish?
2 Tablespoons coconut oil
4 cups fresh kale, stems cut off
2 sweet potatoes, roasted
1 lemon, juiced
1/2 cup chopped walnuts
Heat coconut oil in a large skillet. Add kale and use tongs to toss around to coat the kale; won't take long to wilt it. This helps it not taste bitter. Top with roasted sweet potatoes and add lemon juice, if desired. For added crunch, add chopped walnuts.
