2-3 sprigs fresh herbs…i.e. basil, mint, oregano, parsley or thyme
Heat the olive oil in a medium saucepan on medium high temperature. Add the onion. Cook until onion softens, about 2 minutes. Add the garlic. Sautéfor another minute or less. Add the wine. Let it sizzle and almost all evaporate. Add the can of crushed tomatoes. Season with salt & pepper…add hot pepper if desired. Let simmer for 10-15 minutes. When you're about to add it to your pasta, add some fresh herb leaves torn into small pieces.
