Chef Paulette's Easy Tomato Sauce

2-3 tablespoons olive oil

1 small onion, diced

1-2 garlic cloves, minced

1/4-1/3 cup of dry white wine

1 28-ounce can of crushed tomatoes

salt & pepper to taste

pinch hot pepper (optional)

2-3 sprigs fresh herbsi.e. basil, mint, oregano, parsley or thyme

Heat the olive oil in a medium saucepan on medium high temperature. Add the onion. Cook until onion softens, about 2 minutes. Add the garlic. Sauté for another minute or less. Add the wine. Let it sizzle and almost all evaporate. Add the can of crushed tomatoes. Season with salt & pepperadd hot pepper if desired. Let simmer for 10-15 minutes. When you're about to add it to your pasta, add some fresh herb leaves torn into small pieces.
