No-cook Asian Sweet Potato, Carrot & Cabbage Slaw

2 TBSP rice vinegar
Juice of 2 limes
1/2 tsp sesame oil
1/2 cup grapeseed oil
2 tsp sugar
1 small sweet potato, peeled, julienned
2 medium carrots, peeled, julienned
1/2 medium head green cabbage, thinly sliced
1 scallion, thinly sliced
1 jalepeno, thinly sliced into rounds
1 small red bell pepper sliced
1/4 cup salted cashews, chopped

1. In a medium bowl, whisk together rice vinegar and lime juice. Slowly add sesame oil and grapeseed oil until combined. Add sugar, and salt and pepper to taste.
2. In a large bowl, combine sweet potato, carrot, cabbage, scallion, jalepeno, and bell pepper. Toss with dressing, then top with cashews.
