Aimee Fortney's Goat Cheese and Caramelized Onion Savory Pastries

  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 8 ounces softened goat cheese
  • 1 box of puff pastry, thawed
  • Freshly cracked black pepper
  • 1 egg, beaten
  • 1 teaspoon water

In a skillet, heat the olive oil, then add your onion slices. Preheat the oven to 350. Cook the onion for about 25 minutes, stirring occasionally, to completely caramelize. Meanwhile, roll out each sheet of puff pastry. Spread the softened goat cheese on the puff pastry, then top with the freshly cracked black pepper. Add the onions on top, then cut the pastries into four rectangles per sheet. Fold over to form a triangle and seal the edges and cut two small slits at the top so steam can escape. In a small bowl, beat the egg with water and then brush on top of pastries. Bake for 30 minutes (or until golden brown). Enjoy!
