Chef Nick Pellegrino's Baked Zucchini Fries

Serves 4-6

2 medium sized zucchini, sliced french fry style

½ cup all purpose flour

¼ tsp salt

¼ tsp black pepper

½ cup milk

2 large eggs

1cup plain bread crumbs

½ cup grated parmesan cheese

Preheat oven to 425 degrees. Slice zucchini in half then again into lengthwise slices. Lay slices flat and slice into French fry shaped strips. Pat dry with paper towels removing as much moisture as you can. In one bowl, mix salt, pepper and flour. In second bowl, whisk eggs and milk. In third bowl, mix bread crumbs with grated cheese. Working form left to right, dredge zucchini strips in flour, egg mixture and bread crumbs. Place a cooling rack on a sheet pan and arrange fries on rack. Bake in oven for 20 minutes till golden brown and crispy. Serve with marinara or your favorite dipping sauce.
