Chef Nick Pellegrino's Rosemary Shrimp Scampi Skewers

 1 tablespoon dry white wine

1 teaspoon fresh lemon juice

1 teaspoon olive oil

1/8 teaspoon salt

1/8 teaspoon freshly ground black pepper

2 garlic cloves crushed

18 large shrimp, peeled and deveined

6 (6-inch) rosemary sprigs

Lemon wedges (optional)




Combine first 6 ingredients in a medium bowl. Add shrimp and mix to coat. Marinate in refrigerator 30 minutes. Thread 3 shrimp onto each Rosemary sprig to make 6 skewers. Arrange skewers on a pre heated grill or grill pan. Cook for about 2 minutes each side. Remove from grill and serve immediately with lemon wedges.
