Aimee Fortney's Blueberry-Watermelon Mojito

For the Fourth of July, why not enjoy watermelon in a Blueberry-Watermelon Mojito?


  • Makes 2 drinks
  • 2 cups watermelon
  • 1/2 cup blueberries
  • 1/2 cup mint
  • 2 limes
  • 2 shots of rum (I used Cruzan Aged Rum)
  • Blueberry Simple Syrup (recipe below)
  • Club soda

Place 1/4 cup blueberries in the bottom of two tall glasses,  then add a couple of chunks of watermelon, then a few pieces of mint to each glass. Muddle 1 1/2 cups watermelon, 1 lime, quartered and mint in a separate glass or cocktail shaker.

Add the rum and a splash of plain or blueberry simple syrup (When watermelon is this sweet, you don't need much sugar!). Shake, then pour into glasses and top with club soda.

For a fun garnish, use a star-shaped cookie cutter and cut your watermelon into a star; garnish your glass with the star-shaped watermelon!


  • 2 cups of blueberries
  • 1 cup of water
  • 1 cup of sugar

Bring blueberries, water and sugar to a boil in a small sauce pot, then remove from heat and allow to cool. Lightly mash the blueberries, then strain mixture into a mason jar.
