Aimee Fortney's 'Nashvilly' Cheesesteaks

Everyone knows about the Philly cheesesteak, but I've come up with a way to not only make a healthier version, but also a shout-out to my hometown! Here's my "Nashvilly Cheesesteak."


Makes 4

  • 4 hoagie buns
  • 2 pounds thinly sliced turkey
  • 1 tablespoon olive oil
  • 1 red bell pepper cut into strips
  • 1 sweet onion, sliced
  • 4 slices Provolone cheese
  • 1 cup reduced sodium chicken broth (optional)

Saute the onion and red bell pepper in olive oil over medium heat until very tender and sweet. In a large skillet, add the thinly sliced turkey and tear into small pieces. Lightly cook this in olive oil. Place turkey in skillet and tear into pieces and lightly saute to heat.

Then add the onions and bell peppers to the turkey mixture. Brush buns with olive oil, then heat hoagie buns on skillet, then add provolone cheese to the buns. Top with the turkey and onion mixture.

If desired, reduce 1 cup of chicken broth with 1 tablespoon of the onion mixture. "Dab" this "au jus" mixture on top of the sandwiches. Enjoy!
