Aimee Fortney's Mojito Sorbet

An easy, delicious, grown-up dessert? Why not? A mojito sorbet, it is!


  • 1 1/2 cups sugar
  • 1 1/2 cups water
  • 1/2 cup chopped mint
  • 3 limes, juiced and zested
  • 1/2 cup rum (I use Shellback Rum)
  • 1/2 cup club soda

In a small sauce pot over medium heat, combine the sugar and water. (Making a simple syrup; and simple syrup is always equal parts sugar and water). Add the mint and bring to a boil, stirring until the sugar is completely melted. Remove from heat and allow to cool. Add lime juice, rum and club soda. Pour into a square dish (8 x 8 or 9 x 9 size). Stir gently, then cover with aluminum foil and place in the freezer for at least four hours. Serve in a martini glass or small bowl. Enjoy!
