Chef Nick Pellegrino's Balsamic Strawberries

2 pounds fresh strawberries

1/4 cup granulated sugar

1/3 cup balsamic vinegar

1/2 cup mascarpone cheese

1/4 cup heavy cream

2 tablespoons sugar

1 teaspoon vanilla

Wash, stem, and cut strawberries into quarters. In a large mixing bowl toss strawberries with balsamic vinegar and sugar to coat. Marinate in vinegar for at least 15 minutes. Place mascarpone, cream, sugar, and vanilla in a medium bowl and beat till soft peaks form. Serve in rocks glasses with mascarpone whipped cream on top.
