Chef Paulette's Mini-Fillo Shells Sweet & Savory

Ingredients

Mini-Fillo Cannoli

1 cup ricotta

1/4 cup sugar

1/4 cup mini-chocolate bits

Zest from 1 orange

4-5 dried candy cherries or maraschino cherries, quartered or slivered

1 package Athens mini-fillo shells (15 cups)

In a medium mixing bowl, combine the ricotta, sugar, chocolate bits, and zest. Mix well until smooth. Spoon mixture into fillo cups. Top with a piece of cherry.

 

Ham 'n Cheese Bites

Ingredients

1 cup shredded provolone cheese (use a box grater with large holes)

1 cup ham, cut into tiny pieces

1/4 cup honey

1/4 cup dijon mustard

1 package Athens mini-fillo shells (15 cups)

In a medium mixing bowl, mix together the cheese and ham. Spoon a dab of honey and a dab of mustard into the bottom of each fillo cup. Fill cups with ham-cheese mixture. Dab the top with some honey and some mustard. Bake in a 375 degree oven for 3-5 minutes until cheese melts.
