Aimee Fortney's Frozen Ice Cream Balls

3/4 cup coconut oil

2 cups chocolate chips

2 cups ice cream (flavor of your choice)

toothpicks or lollipop sticks

sprinkles (optional)

Melt the coconut oil and chocolate chips in a sauce pot over low heat. Stir until the coconut oil is melted completely and the chocolate has been incorporated into the coconut oil. Remove from heat and allow to cool; stirring occasionally. Using a melon baller or two spoons, scoop balls of ice cream onto a parchment lined cookie sheet, insert toothpicks or lollipop sticks, then place in the freezer to allow the balls to get hardened. Remove the ice cream balls from the freezer and dip into the chocolate, then roll in the sprinkles, if desired. Place back on a parchment lined cookie sheet and return to the freezer until you are ready to enjoy! The chocolate acts like a "magic" hardening shell, as it meets the ice cream, it sets, almost immediately. Enjoy!
