Nick Pellegrino's Grilled Lamb Chops w/ Mint Pesto

Ingredients

Serves 4

12 single rib baby lamb chops

¼ cup fresh rosemary chopped

¼ cup extra virgin olive oil

½ tablespoon Aleppo pepper *

½ tablespoon sea salt or kosher salt

½ teaspoon fresh cracked black pepper

* Can substitute with Ancho peppers or 4 parts sweet paprika plus 1 part cayenne pepper

Mint Pesto

¼ cup toasted pine nuts

½ cup fresh mint

4 cloves fresh garlic

½ cup extra virgin olive oil

½ teaspoon lemon zest

Salt and pepper to taste

Whisk together herbs, olive oil, peppers and salt to combine. Marinate chops in mixture for at least 1 hour.

Preheat grill or grill pan till smoking hot.

While grill is heating prepare pesto.

In food processor add all dry ingredients and slowly drizzle in olive oil. Check for seasoning and set aside.

Place chops on hot grill. Grill for about 2-3 minutes per side for perfect medium rare chops. Remove from grill and serve immediately topped with mint pesto. Finish with freshly grated lemon zest.
