With Mardi Gras being tomorrow, I've taken a favorite pastry from New Orleans and am showing you how easy it is to make at home!
AIMEE FORTNEY'S CHOCOLATE ALMOND PASTRIES
As a kid, my parents would go to New Orleans quite a bit, and my Dad still talks about how much he loves those almond pastries from bakeries down there. So I thought I would do my best to recreate them, as well as add chocolate to it!
Preheat oven to 350.
Roll out each sheet of puff pastry and cut into four equal squares. In the center of each square, place 1 tablespoon of almond paste and 1 teaspoon of chocolate chips. Fold the end of each square over the filling and press to close with your fingers, making a triangle.
Place on a parchment lined cookie sheet. Make an egg wash with beaten egg and water, then brush on top of pastry. Sprinkle tops with just a small amount of sugar and bake for 30 to 35 minutes or until golden. Melt chocolate chips in the microwave and stir well. Remove from the microwave and stir in almond extract. Place the melted chocolate in a sandwich bag and snip the edge off of one corner, then drizzle melted chocolate over the top. Enjoy!
