As the month of February makes us think about date nights, here is a great and easy "date night in" meal! I call it "Whine for Mussels" because the white wine sauce will make you "whine" for more!
AIMEE FORTNEY'S WHINE FOR MUSSELS (DATE NIGHT IN)
Heat your 2 tablespoons butter, 1 tablespoon olive oil, then add your garlic and shallot. Next add 3 cups of Chardonnay; bring to a boil and add 2 pounds mussels (that you have washed and checked to make sure none are open). Place the lid on your pot and keep your eyes on it. Stir after 1 minute. Gently shake your pot over the burner. This can take anywhere from 3 to 5 minutes. They will open when they are done. Serve with crusty bread and enjoy that delicious wine broth!
