Grapefruits are so delicious now that they taste like candy! Today, I'm showing you how to use them in a rice dish, as well as a Sangria!
For both of these recipes that call for grapefruit, if you take a medication that won't allow you to eat grapefruit, you can substitute with oranges.
AIMEE FORTNEY'S GRAPEFRUIT-CITRUS RICE
In a pot, bring 2 cups of water and the juice from half a grapefruit to a boil. Add the rice to the pot. Cover and remove from the heat. When the rice is cooked (about 5 minutes), add the grapefruit segments and freshly squeezed lime juice. Stir well and top with freshly chopped mint. Serve in hollowed out grapefruit, if desired.
AIMEE FORTNEY'S GRAPEFRUIT SANGRIA
In the bottom of a pitcher, place the frozen fruit, then add 1 cup freshly squeezed grapefruit juice, 3 cups Riesling, 1/4 cup 43 liqueur, 1/4 cup Orange whipped vodka and stir. Top with 1/2 cup to 1 cup club soda, then garnish each glass with a slice of grapefruit, if desired. Enjoy!
