Retail has their "Winter White" specials, so why not have a "Winter White" special in your kitchen? This white bean soup is full of delicious "super food" vegetables that will taste too good to be healthy!
AIMEE FORTNEY'S EASY WINTER WHITE SOUP
In a large soup pot, sauté 2 carrots, 2 cloves of garlic and 1 shallot in olive oil. Add 1 large diced potato, 2 cans of cannellini beans that have been drained and rinsed, then add 4 cups reduced sodium chicken broth, water and 1 cup white wine. Thicken this mixture, if desired, by mixing 3 tablespoons corn starch with 1/2 cup cold chicken broth. Once mixed, add to the soup and stir. Bring soup to a boil, then add 1 cup of freshly chopped kale. Add 1 tablespoon crushed red pepper. Simmer for 30 minutes, covered. Enjoy with your favorite bread.
