Basic Truffle Filling (Ganache)

8 ounces Dark Chocolate (60% or higher)

8 ounces Heavy Cream

1 Tablespoon Unsalted Butter (softened)

  • Chop chocolate into small pieces or shred with a box grater
  • Boil cream and pour over the chocolate
  • Allow to set for 5 minutes.
  • Stir till smooth
  • Allow to cool slightly then stir in the soft, not melted butter.
  • Allow to set overnight.

Once Ganache is set, it can be stir with a mixer or by hand, then formed into balls.  Allow to set for ½ an hour before coating.
