1 lb. Italian sausage meat
¼ cup grated Parmigiano or Pecorino grated cheese
3-4 parsley sprigs, leaves minced
¼ cup currants or raisins
¼ pine nuts
salt & pepper to taste
Combine all ingredients until well blended. Shape into small meatballs and set out in one layer on a foil-lined sheet pan. Roast at 400 degrees F. for 20-minutes to ½ hour until cooked through and golden. Serve with your favorite meatball dipping sauce or simmer in tomato sauce for 10-15 minutes and serve with pasta.
