April McKinney's Skillet Chicken Parmesan

Serves 4


1.5 pounds chicken cutlets

1/2 cup all purpose flour

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon Italian seasoning

3/4 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons extra virgin olive oil

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/3 cup Italian cheese

2 tablespoons fresh Basil


In a shallow bowl or dish, stir together flour, garlic powder, onion powder, Italian seasoning, salt, and pepper.  Place a large skillet over medium high heat with 1 tablespoon of oil.  Place the flour mixture beside the skillet and dredge each cutlet through the seasoned flour on both sides, then place the cutlets in the hot skillet. 

Cook for 5 minutes, add the remaining tablespoon of oil and flip the chicken.  Cook for another 5 minutes.  Turn the heat down to low and spoon some of the marinara sauce onto each cutlet, then sprinkle each evenly with the cheeses.  Place the lid on the skillet for 1-2 minutes to allow the cheese to melt.  Top with the fresh basil and serve with a fresh salad.
