Chef Paulette's Cheese Toast w/ Sundried Tomato & Olives

½ loaf baquette or long Italian bread, cut into ½-inch slices

1/3 cup olive oil

½ pound mozzarella, cut into ¼-inch slices to fit bread slice

½ cup pitted kalamata olives, sliced into rounds

½ cup sundried tomatoes, cut into small pieces, or julienned

¼ cup small capers

salt & pepper to taste

Preheat oven to 400 degrees F.

Line the bread slices on a sheet pan or gratin pan. Lightly brush with olive oil on both sides. Top each slice with a slice of mozzarella. Sprinkle lightly with salt & pepper. Sprinkle olives, sundried tomatoes & capers on each slice.  Bake in oven for about 10 minutes until cheese melts and bread becomes toasty. Serve warm.
