For 1 quesadilla
1 flour tortilla
1/2 cup cooked and chopped chicken
2 tbls caramelized red onions
2 tbls bbq sauce
1/4 cup cheddar cheese
1 tbls chopped green onions
To caramelize onions, heat a skillet over low heat and add 1 tbls canola oil or butter. Cook 1 onion (chopped) for 20 minutes in the skillet, stirring often. Add a splash of water to the skillet if onions look dry.
Remove the onions and spray the skillet with cooking spray. Turn heat up to medium.
Place the tortilla in the skillet and turn after 1 minute. Add the chicken and 2 tbls red onions to one half of the tortilla in the skillet. Next evenly distribute the bbq sauce, cheese, and green onions over the chicken. Flip one half of the tortilla over the half with the filling and lightly press down with a spatula.
If making more than one quesadilla, place the finished ones on a sheet pan in a 250 degree oven. Cut in halves or quarters and serve with sour cream.
