Aimee Fortney's Leftover Dressing/Stuffing Cakes

Getting sick of your leftovers already? Here's a fun way to use up your leftover dressing or stuffing and not let it go to waste, yet give it another taste!


  • 3 cups leftover dressing/stuffing, crumbled (usually it "clumps" up after refrigerated)
  • 2 eggs, beaten
  • 1/2 cup bread crumbs
  • 1 teaspoon olive oil
  • 4 eggs, fried (for topping)

Heat olive oil in a non-stick skillet over medium heat. Mix together the leftover dressing (or stuffing), 2 beaten eggs and a 1/2 cup of bread crumbs in a large bowl. If the mixture is too dry, add one more egg to moisten. Using your hands or an ice cream scoop, scoop this mixture into your hand, then gently pat and place into skillet. Cook on both sides, then serve with a fried egg on top. Perfect for a brunch or dinner item!
