Aimee Fortney's Honey and Ginger Mashed Carrots

As Thanksgiving is just around the corner, I'm trying to help you come up with alternative side dishes to serve. These easy mashed carrots are as delicious as they are pretty and colorful!


  • Serves 4
  • 5 or 6 large carrots, cut into chunks
  • Water
  • 1/4 to 1/2 cup orange juice
  • 1 teaspoon freshly grated ginger
  • 1 tablespoon honey
  • 1 tablespoon fresh mint, chopped

Boil carrots in a large pot of water and cook as you would cook potatoes for mashed potatoes. (Cook until the carrots are fork tender). Remove from heat and drain the carrots, then return the carrots to the pot and place back on the burner to allow the steam to escape. Using a hand mixer, beat the carrots with the orange juice, ginger and honey. Beat until they are "whipped" like potatoes. Garnish with fresh mint.
