Nick Pellegrino's Sausage and Pepper Mummies

Ingredients

1 package frozen puff pastry sheets

6 sweet Italian sausages

1 small jar of roasted red peppers

Pre heat oven to 425 degrees spray a baking sheet with non stick spray. Poke a few holes in the sausage and bake for 15 minutes till cooked through.

Cut pastry sheets into 1/2 inch strips. Remove sausage from oven and let cool. When cooled place red pepper on top of sausage and begin to wrap strips around sausage leaving a space for eyes. Continue wrapping sausage till mummies are assembled. Bake at 425 degrees for 15 minutes till golden brown. Let cool and serve!
