Need an easy, one-pot meal? Try this sweet potato and chicken hash! It is healthy, easy and delicious!
1 large sweet potato, peeled and cut into cubes
1 small red onion, cut into chunks
2 boneless, skinless chicken breasts, cubed
1 clove of garlic, minced
1 Tablespoon olive oil
2 Tablespoons fresh basil, chopped
2 Tablespoons fresh thyme, torn from the stem
1/4 to 1/2 cup reduced sodium chicken broth, if needed
In a large skillet, sauté sweet potato, onion, chicken and garlic in olive oil. Cook until the vegetables are tender and the chicken is cooked all the way through. If needed, add the chicken broth, then add the basil and thyme. Enjoy!
