Gluten Free Pumpkin Streusel Bread

1 c almond flour

¼ c coconut flour

¼ c pepitas, ground

½ t soda

½ Tb cinnamon

½ tsp ginger

¼ tsp ea clove, nutmeg, salt

1 c pumpkin puree

½ c honey

¼ c melted extra virgin coconut oil

4 eggs


1)   Preheat oven to 325 degrees.  Line loaf pan with parchment and spray with pan spray.

2)   Combine all dry ingredients in one bowl.  Combine wet ingredients in separate bowl. 

3)   Combine wet and dry ingredients together.

4)   Top with streusel (recipe below).  Bake 1 hour or until knife comes out clean.  Cool 10 minutes.

Streusel:         ½ c chopped walnuts, 1 T melted coconut oil, 1 T honey, ½ tsp cinnamon, 1/8 tsp nutmeg, 2 T unsweetened coconut flakes  (combine all in a bowl.)
