Looking for a "super easy" soup? Look no further! As the temperatures are cooling down, this tortellini soup is healthy, easy and delicious. The garbanzo beans add extra protein.
AIMEE FORTNEY'S SUPER EASY TORTELLINI SOUP
In a large soup pot, bring chicken broth and water to a boil. Add tomatoes with chilies, garbanzo beans, tortellini and spinach. It will only take 3 to 5 minutes to cook the frozen tortellini, but you can cover and simmer until you are ready to eat.
Grate cheese into the bottom of your bowls, ladle soup into bowls and then place more cheese on top to make it extra cheesy (if desired)! Top with sour cream to tone down the spicy heat from the chilies. (You may omit the tomatoes with chilies and just use plain diced tomatoes, if desired.)
