Monday's recipe (10/7/13) - Aimee Fortney's Easy Chicken Stir Fry

No need for takeout or reservations. This easy chicken stir fry is not only a quick dish, but it is very healthy and delicious!


  • 1 pound boneless skinless chicken breasts, cubed
  • 1 tablespoon olive oil
  • 1/2 cup onion, diced
  • 2 tablespoons reduced sodium soy sauce
  • 1 tablespoon fresh ginger, minced
  • 1 can drained water chestnuts
  • 1 16 oz. bag of frozen broccoli florets
  • 1 16 oz. ounce bag of frozen carrot slices
  • 1 cup reduced sodium chicken broth
  • 2 tablespoons cornstarch
  • Cooked rice

In a large non-stick skillet, cook chicken. Add onion and cook until translucent. In a measuring cup or small bowl, stir together soy sauce and ginger. Add this mixture to your chicken, then stir well. Add the water chestnuts, broccoli and carrots. In a small bowl or measuring cup, stir chicken broth and cornstarch together until the cornstarch is dissolved. Add this mixture to the chicken and vegetable mixture and stir well to combine everything together. Cover the skillet and cook for just about 2 minutes more, then serve over rice.
