AIMEE FORTNEY'S EASY CHICKEN STIR FRY
In a large non-stick skillet, cook chicken. Add onion and cook until translucent. In a measuring cup or small bowl, stir together soy sauce and ginger. Add this mixture to your chicken, then stir well. Add the water chestnuts, broccoli and carrots. In a small bowl or measuring cup, stir chicken broth and cornstarch together until the cornstarch is dissolved. Add this mixture to the chicken and vegetable mixture and stir well to combine everything together. Cover the skillet and cook for just about 2 minutes more, then serve over rice.
