3 tablespoons olive oil
1 large white onion, cut into thin slices
3-4 medium zucchini, rinsed and cut into rounds or half-moons
½ cup golden raisins
¼ cup vinegar, or more to taste
salt & pepper to taste
2-3 sprigs mint, leaves removed & torn into small pieces, stems discarded
Heat the oil in a medium sauté pan. Sauté the onions until softened. Add the raisins. Cook 3-5 minutes more. Add the zucchini, stir to combine. Sauté until softened. Add the vinegar, salt & pepper to taste. Cook 5 minutes more. Transfer to a serving bowl or platter. Sprinkle mint on top.
