Aimee Fortney's Guacamole Chicken Salad

Monday night football, tailgating food, quick, healthy and easy dinner or just because ... this Guacamole Chicken Salad is a win-win for everyone! You aren't using any mayonnaise, so this easy dish is healthy and delicious!


  • 2 cups chopped, cooked chicken
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper or chili powder (can use both, if desired)
  • 4 avocados
  • 1/2 of one large white onion
  • 1 tomato, seeded and diced
  • 1/3 cup chopped cilantro (about a handful)
  • 1 teaspoon kosher salt
  • 1 lime, juiced

Mix chopped chicken with cumin, cayenne pepper and/or chili powder. Set aside. In a large bowl, mash avocados with a fork, then add onion, tomato, cilantro, salt and lime juice. Add chicken, then toss all ingredients together to coat the chicken with the guacamole mixture to make it Guacamole Chicken Salad. Taste before serving to see if you need to adjust seasonings.
