Aimee Fortney's Easy Fall Granola

The smell of fall fills your house when you bake this easy, delicious granola. Cutting back on the brown sugar and substituting coconut oil in place of butter or vegetable oil makes this a much healthier treat!

2 cups oatmeal

1 cup almonds (walnuts, cashews, pecans or any other nuts may be substituted)

1/4 cup coconut oil

1/4 cup honey

1/4 cup brown sugar

1 teaspoon pumpkin pie spice

1 teaspoon ground cinnamon

1/2 cup shredded coconut

1/2 cup dried cranberries

1/2 cup semi-sweet or dark chocolate chips

In a large bowl, mix oatmeal, almonds, coconut oil, honey, brown sugar, pumpkin pie spice, cinnamon and coconut together. Stir well. Line a cookie sheet with parchment paper, then spread mixture out onto the cookie sheet. Bake at 300 for 45 minutes to 1 hour, stirring every 15 minutes. Remove from oven and allow to cool for 15 minutes. Add the dried cranberries and chocolate chips, stir well to combine, then pour mixture in mason jars or plastic containers with lids. This granola is great alone, or on top of fruit and yogurt or even ice cream. (Makes a great gift, too!)
