Friday's recipe (9/6/13) - Aimee Fortney's Save the Produce Ice Cubes

You hate to spend money on good produce, then let it go to waste, right? Here's a great way to use it up and save it before it goes bad! All you need to do is puree it in the blender, then pour it into ice trays!


Use the following that you have, on hand, before it goes bad:

Strawberries * (see note for purchasing)

* My friend, Stacy Greathouse at Publix taught me how to buy strawberries. When looking at the cartons of strawberries, select the carton that appears to be the "fullest." As strawberries begin to shrink, they tend to not only reduce in size but they also become moldy. Buy strawberries that look to be the fullest in the carton; take them home, wash and stem them.

Puree any produce, like the spinach, strawberries, blueberries and raspberries before they go bad, in the blender. Once pureed, pour into ice trays and freeze until completely frozen. For a protein drink, follow directions below:


1 cup Chobani Greek yogurt (for this one, I used the Black Cherry; which has 19 grams of protein for 1 cup serving)
1 cup Silk Very Vanilla Soymilk
1 frozen banana
4 "spinach and fruit" produce ice cubes

In your blender on the "crush ice" setting, crush the "produce" cubes. Add the remaining ingredients, then blend all together. Pour and enjoy!
