6 fresh figs
½ cup mascarpone cheese
2-3 sprigs fresh mint, leaves minced
3 tablespoons honey
12 4-inch pieces of prosciutto
salt & black pepper for sprinkling
Cut the figs in half lengthwise. If they are very big you might want to cut them into quarters to be bite-sized.
Spread a little mascarpone over the middle of each fig. Sprinkle with minced mint leaves, salt & black pepper. Spoon a small dollop of honey on top. Wrap the fig in a piece of prosciutto. Repeat with the rest of the figs.
