Chef Paulette's Tomato & Watermelon Salad

3 ripe tomatoes, cut into wedges

2 cups watermelon, seeded and cubed

1 cucumber, cut into half-moon chunks

a few leaves Boston or romaine lettuce, sliced into strips

¼ cup crumbled feta cheese

¼ small-medium red onion, sliced into thin half-moons

salt & pepper to taste

olive oil for drizzling

a few tablespoons apple cider vinegar

Gently mix together the first 6 ingredients. Drizzle a very light coating of olive oil. Add some vinegar. Season lightly with salt & pepper. Toss gently. Let salad sit for about 5-10 minutes before serving (so flavors can combine).
