Chef Paulette's Simple No-Cook Pasta Sauce

3-4 fresh tomatoes, cut into small cubes

1 large scallion, minced

5-6 sprigs flat-leaf parsley, leaves minced (or other favorite herb)

2 basil sprigs, leaves torn

1/2 cup olive oil

salt & pepper to taste

pinch red pepper flakes

1/2 cup grated cheese (parmigiano or Pecorino)

Mix all ingredients together. Add cooked pasta (reserve a cup of pasta water). Coat pasta with sauce. Add more olive oil and/or pasta water if it needs more moisture. Adjust seasoning if needed. Serve with grated cheese.
