Friday's recipe (7/5/13) - Aimee Fortney's baked sweet potato chips

Too much "bad" food during your 4th of July celebration? Try these delicious sweet potato chips! They are healthy, easy and wonderful to pair with any burgers, sandwiches or just to enjoy as a snack!

2 large sweet potatoes
2 Tablespoons olive oil
1 Tablespoon cornstarch
1/2 teaspoon chili powder
1/2 teaspoon cayenne

OR for sweeter chips:
1 teaspoon cinnamon
kosher salt and pepper to taste


Preheat oven to 400. Wash your sweet potatoes, then dry them very well. Peel them then set aside. Using a mandolin or a sharp knife, slice potatoes very, very thin. (The thicker they are, the less "crispy" they will get). Place in a bowl and add olive oil and seasonings. Spread sweet potatoes out on baking sheet and place in the oven. Bake for 15 minutes, then remove from the oven, flip with a spatula and return to bake for another 10 to 15 minutes. Season with kosher salt and pepper, if desired.
