Summer eating can be light and healthy; especially when it is hot outside. This Savory Fruit Salad is the perfect summer meal! The grapefruit and orange are packed with Vitamin C and fiber; not to mention this is an excellent way to "fill up" on healthy fruits and vegetables and lose weight the natural, healthy way; rather than dieting!
AIMEE FORTNEY'S SUMMER SAVORY FRUIT SALAD
bag of Arugula mixed greens
1 mango, peeled and chopped
1 red onion, diced
1 grapefruit, cut into slices
1 orange, cut into slices
2 avocados, cut into slices
4 leaves of fresh basil, shredded (torn by hand)
4 leaves of fresh mint, also torn
The juice of 1 lime for dressing
Place arugula on the bottom of a plate or platter, then arrange the mango, red onion, grapefruit, orange and avocado. Squeeze lime juice over all, then add the fresh basil and cilantro. If you desire a dressing, mix 2 Tablespoons olive oil with 1/2 cup orange juice, 1 Tablespoon honey and pepper in a mason jar or small container with a lid. Shake well then add to salad.
