Aimee Fortney's Mexican Cilantro Lime Rice

2 cups reduced sodium chicken broth

2 cups minute rice

1 bunch cilantro, stems removed

zest from 1 lime

juice from 1 lime

1/2 teaspoon sea salt

1/2 teaspoon black pepper

2 Tablespoons olive oil

Bring chicken broth to a boil in a medium sized pot. Add rice then cover and remove from heat. Place cilantro, lime zest, lime juice, salt, pepper and olive oil in your blender. Pulse all together and if more olive oil is needed, add a bit more. Once rice has absorbed all of the liquid, pour cilantro lime mix into rice. Stir to coat, then serve.
