Dessert Parfait – Pears, Gorgonzola, Walnuts & Honey

Serves 4

2 ripe Bartlett pears

juice of 1 lemon

¼ cup brown sugar

4 tablespoons gorgonzola cheese, crumbled

½ cup walnuts, broken into bite sized pieces

4 teaspoons honey

½ cup dried cranberries

Peel and core the pears. Cut into thin wedges. Toss with lemon juice.

In a medium saucepan, heat ½ cup of water with the sugar. Cook until sugar dissolves. Add the pears and cook for 5 minutes until slightly softened. Drain and cool pears.

To make parfaits:

Divide the pears into four pretty goblets. Spoon a tablespoon of cheese in each one and sprinkle with walnuts & cranberries. Drizzle honey. Serve.
