Friday's recipe (4/19/13) - Aimee Fortney's Surf and Turf (Crab-stuffed) burgers

A viewer, Mya, emailed me about a burger she had in Las Vegas. She told me it was the most expensive burger she has ever had; she cannot remember if it had crab or lobster, and she cannot remember if the crab/lobster was on top or inside of the burger. So I came up with this burger to help recreate that vacation food memory for her!

AIMEE FORTNEY'S SURF AND TURF (CRAB-STUFFED) BURGERS

2 packages ground turkey (at least 1 pound each)
1 package ground pork
1 teaspoon cayenne pepper
1 teaspoon complete seasoning
1 teaspoon ground cumin
8 ounces lump crab meat

Mix ground turkey and ground pork with seasonings in a bowl. Form into 7 burgers. Place six burgers on a plate and form a little hole in the center with your finger. Place lump crab meat in the center. Take a piece of the 7th "burger" to cover the top. Seal around the edges. Heat your cast iron skillet to medium-high and add a Tablespoon of olive oil. Place burgers in skillet, then cook for 6-8 minutes on each side on a cast iron skillet. Serve with Monterrey jack cheese, lettuce, red onion, tomatoes and cilantro-lime yogurt sauce.

AIMEE FORTNEY'S CILANTRO-LIME YOGURT SAUCE

1 cup low fat Greek yogurt (I used Chobani 2% plain, low fat)
1 bunch of cilantro
The juice and zest from one lime
1/2 teaspoon black pepper

Place yogurt, cilantro (leaves, stems removed), lime zest and juice and black pepper in the blender. Blend until all combined. Serve with burgers and store remaining amount in a sealed container in the refrigerator.
