Chef Paulette's Rapini (Broccoli rabe) & Mozzarella Sliders

1 bunch rappini (also known as broccoli rabe)

2-3 tablespoons olive oil, plus more for drizzling

2-3 garlic cloves, thinly sliced

½ teaspoon red pepper flakes

1 8-ounce fresh mozzarella, thinly sliced

1 medium tomato, sliced thinly

salt & pepper to taste

6-8 slider brioche rolls, sliced open

Cut the rapini into bite-sized piece, discarding the thick bottom stems. Heat the oil in a large sauté pan. When hot add the garlic slices and cook 1-2 minutes until slightly softened. Add the rapini and sauté until wilted and tender, about 5-6 minutes. Add the pepper flakes and season with salt & pepper. Stir to combine.

Drizzle a little olive oil on the open slider rolls. Add a slice of mozzarella to each, a few tablespoons of rapini, and a slice of tomato. Sprinkle a little salt on the tomato. Close slider. Enjoy!
