1)      Marinate Short ribs in guiness at least 4 hours.

2)      Drain and pat dry ribs.  Season with salt and pepper.  Sear in hot skillet with a little oil.  Place browned ribs in crock pot or dutch oven.

3)      In same skillet, sauté carrot, celery, and onion until just browned. Pour over ribs.

4)      Add bay leaves, thyme, garlic, and mustard to crock pot or dutch oven.

5)      Bring leftover guiness marinade and beef broth to a boil. Pour over ribs.

6)      If using crock pot, cook on low 8 hours, or high for 4 hours.

7)      If using dutch oven, cook covered in 300 oven for at least 2-3 hours, or until fork tender.
