Friday's recipe (3/22/13) - Aimee Fortney's roasted rosemary potatoes & garlic

A viewer emailed me in a panic. She is planning to make dinner for her boyfriend for the first time, and she needed a "simple, delicious side dish that isn't too expensive." I thought these delicious potatoes would be perfect for their date night-in!

10 red potatoes
4 cloves of garlic, minced/chopped
4 springs of fresh rosemary, removed from stem
2 Tablespoons olive oil
1/2 teaspoon Kosher salt
1/2 teaspoon ground black pepper

Wash red potatoes, then cut into quarters. Place onto a greased cookie sheet. Add garlic and rosemary. Drizzle olive oil on top, then sprinkle with salt and pepper. Using your hands, mix all ingredients together. Roast at 450 degrees for 20 minutes, or at 400 for 40 minutes. Add more fresh rosemary to the potatoes when they come out of the oven, and place in your serving bowl or plate.
