Friday's recipe (2/22/13) - Aimee Fortney's bacon wrapped chicken thighs & vegetables

Sometimes you just need some comfort food, and bacon does the trick! This bacon wrapped chicken dish is easy, delicious and inexpensive!

Chicken thighs are great to keep in your freezer; not only because of their taste, but because of their price! At a "normal" price of $1.69 a pound, stock your freezer with chicken thighs for recipes like this and soups, or just to bake. The bacon adds so much flavor that you do not need to add salt; the cayenne and black pepper are optional for a "kick."

4 or 5 chicken thighs
5 to 7 pieces of bacon
3 baking potatoes
2 onions (any color)
3 carrots
3 cloves of garlic
1 Tablespoon olive oil
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper

Preheat oven to 375. Wrap each chicken thigh with a piece of bacon. Place in a casserole dish (or pan). Cut potatoes, onions and carrots into cubes, then place in between chicken thighs. Place garlic with vegetables (just drop wherever; you may also mince the garlic, if you prefer a stronger garlic taste). Drizzle olive oil over vegetables, then sprinkle entire dish with cayenne pepper and black pepper. Bake for one hour or until the bacon is crisp.
