Puff Pastry Pie with Tomatoes & Olives
1 puff pastry sheet (Dufour or Pepperidge Farm brand)
Flour for rolling out dough
2 large fresh tomatoes, sliced thinly
½ cup grated mozzarella
½ cup kalamata olives, pitted and sliced into rings or chopped
½ red onion, thinly sliced into half-moons
2 teaspoons dried oregano
2 -3 tablespoons olive oil
salt & pepper to taste
Preheat oven to 400 degrees F
On a lightly floured surface roll out pastry sheet to about 1/8 inch thin. Place on a parchment-lined baking sheet.
Cover the pastry with tomato slices leaving an inch free around the edges like a border. Sprinkle evenly with cheese, olives, onion, and oregano. Drizzle lightly with olive oil. Season with salt & pepper.
Bake in the oven for about 25 minutes until the pastry is golden. Cut into squares. Serve warm or at room temperature.
