Chef VinnyTardo's Meatballs (For sliders)

2.5 pounds ground beef

½ medium onion

1/8 C minced garlic

3 eggs

1/8 C chopped oregano

1/8 C chopped parsley

3/8 C Parmesan cheese

½ pint Panko breadcrumbs

½ T salt

½ T black pepper

Combine panko, Parmesan, salt and pepper in food processor. When broken down, pulse in herbs until well mixed. Combine beef, onion and garlic in mixer. Incorporate well. Add one egg at a time. Slowly add breadcrumbs until incorporated. Do not overmix. You may freeze whatever you don't use.
