My sweet friend, Vicki Barr moved here from St. Bernard Parish in Louisiana after Katrina hit. Vicki is a fabulous cook and she and her husband had five kids, so this was an easy dinner to put on the table for everyone!
2 cups rice (parboiled if possible)
1 pound chopped meat of your choice (boneless, skinless chicken breasts, smoked sausage, shrimp)
2 cream soups of your choice, cream of mushroom or cream of celery
1 can tomatoes with chilies
Fresh, topped green onions for topping
**1 teaspoon cayenne pepper
** 1 teaspoon Caribbean seasoning (or Creole seasoning)
In a large, dutch oven, combine all ingredients. Place in oven at 350 and cook for 1 hour to 1 hour and 30 minutes, stirring every 15 minutes. (This prevents it from sticking). I added the extra seasonings for kick. Top with freshly diced green onions or any of your favorite herbs that you have on hand. Enjoy!
