
There is so much you can do with puff pastry, and a little can stretch to easily feed a crowd! So an elegant, delicious dessert can certainly be done on a budget!
1 sheet puff pastry, thawed
1 pear, thinly sliced
4 ounces honey goat cheese (found in the Publix cheese case, next to the deli)
1 teaspoon cinnamon (mixed with sugar, if desired)
2 Tablespoons honey
Preheat oven to 400. Roll puff pastry out on floured surface. Using a small mason jar or biscuit cutter, cut into small rounds. Place on a parchment lined cookie sheet and prick the center with a fork (to prevent from rising). Spread honey goat cheese on top of puff pastry rounds, then top with slices of pears. "Dollop" a small amount of honey goat cheese in the center and sprinkle with a little bit of cinnamon (and sugar, if using) on top of each round. Bake for 15 minutes. Remove from oven, drizzle with honey and enjoy!
